SBB: Go eat a Mug… Cake

Today our SBB is featuring a delicious recipe!

See, your Blues are already busted, aren’t they?

Just thinking about good food lifts my spirits.Β  When I caught strep throat really badly once, and couldn’t hardly eat anything, I actually drew pictures of ice cream, rice, cake, and all the other things I wanted to eat that I couldn’t have… that’s how much food cheers me up.Β  πŸ™‚

So anyway, let me show you the beautiful mug cake my brothers and I madeΒ a couple days agoΒ – actually we made 6 of them, but if you plan to do that, just bake a regular sized cake.Β  It’ll save a little time πŸ™‚ We had a lot of fun, though, and I’m excited to share this successful cookery with you:

This recipe comes from ‘Mug Cakes’ by Lene Knudsen, photographed by Richard Boutin, published by Hardie Grant books.

 

Lemon Mug Cake:

Ingredients:

1 slice of butter 1 cm thick

4 level tablespoons caster (superfine) sugar ( I used powdered sugar)

2 teaspoons lemon zest

1 egg

1/2 teaspoon vanilla sugar

4 teaspoons light cream ( I used milk; turned out fine)

6 tablespoons all-purpose flour

1/2 teaspoon baking powder

Glaze:

4 tablespoons powdered sugar

1 teaspoon water

yellow food coloring

 


Melt butter in microwave for 20 seconds (800 watts).

In a mug, beat in one by one sugar, lemon zest, egg, vanilla sugar, cream, flour, baking powder, and melted butter

Cook in microwave for 1 minute 40 seconds

Decorate with yellow icing
